Efecto de la temperatura y tiempo en la degradación del ácido Ascórbico en una jalea de Vaccinium corymbosum L. (Arandano)

La presente investigación tuvo como objetivo evaluar el efecto de la temperatura y
tiempo en la degradación del Ácido Ascórbico en una jalea de Vaccinium corymbosum
L. (Arándano).
La degradación del Ácido Ascórbico, en la jalea de arándano, sometida a tratamientos
térmicos a diferentes temperaturas: 80, 85 y 90 ºC y tiempos: 10, 15 y 20 minutos,
respectivamente, comparándose con una jalea de referencia (fresca) sin tratamiento
térmico.
Los resultados obtenidos muestran que el mayor porcentaje de degradación, 0.2% se
obtuvo con el tratamiento térmico de 90 ºC - 20 min y el estudio de la cinética de
degradación del Ácido Ascórbico por efecto del tratamiento térmico, en la jalea de
arándano siguió una cinética de primer orden.
Concluyendo que el tratamiento 1 (80 ºC por 10 minutos) como el tratamiento 2 (80 ºC
por 15 minutos), fueron aquellos que mantuvieron mayor contenido de Ácido
Ascórbico, por otro lado, el tratamiento 3 (90 ºC por 20 minutos) obtuvo un mayor
porcentaje de degradación de Ácido Ascórbico, así mismo mayor efectividad de
destrucción de enzimas y microorganismos termo resistentes indeseables,
asegurando la vida útil de la jalea, y cuyo Po fue de 3,706 minutos en comparación
con los demás tratamientos.
